AUYL — проект Аскара Байтасова. За меню в ресторане отвечает бренд-шеф Руслан Закиров родом из Петербурга, где он известен как глава кухни ресторана Hidden и серии проектов Kuznya. Основной лейтмотив меню от Руслана — neo nomad cuisine — осовремененная версия кухни кочевников. Большая часть блюд готовится на основе трех важнейших в этой культуре ингредиентов: воды, муки и мяса. Приготовленные на открытом огне, в казанах, на мангале и тандыре. Как и в Tunguska, в AUYL команда отдает дань традициям коренных народов и использует техники приготовления, существовавшие тысячи лет назад, и внедряет в меню блюда региона, но при этом рассматривая их с точки зрения современности. Локальность и сезонность — еще два гастрономических принципа, которые роднят эти концепции, и 13 сентября на высоте 1691 метр над уровнем моря на один вечер Сибирь заглянет в гости к неокочевникам.
Николай Бобров и команда приготовят сет-ужин из 7 курсов с винным и коктейльным сопровождением на коньяке, а на стенах ресторана появится этническая проекция, погружающая в атмосферу Севера.
В меню ужина:
· Енисейская нельма с чёрной икрой из боровиков в соусе на хрене с икрой хариуса
· Хрустящий камень с косулей и брусникой, черным чесноком и бархатцами
· Птичка-пирог с фермерской перепелкой и фуагра с вяленым яком и соусом на основе хрена и ряженки
· Староверская пшённая паста катанка с говяжьими щеками и сморчками в соусе из выдержанного сыра
· Енисейский ленок с печёной капустой в соусе из шампанского с икрой хариуса
· Таймырский олень с глазированной свеклой, айоли из черемши и черного чеснока с порто, костным мозгом и икрой стерляди
· Черная Павлова с сорбетом из жимолости и маринованной черешней
TUNGUSKA TOURS
On 13 September, the team of the Tunguska restaurant, led by its brand chef Nikolay Bobrov, will present modern Siberian cuisine at the AUYL restaurant, located on the mountain slope in the Medeo gorge (Kazakhstan).
AUYL — is an experimental gastronomic project by Askar Baitassov. The cuisine is in the hands of experienced brand chef Ruslan Zakirov from St. Petersburg, where he has successfully worked at the Hidden restaurant and at the KuznyaHouse restaurant. The keynote of the Ruslan’s menu is neo-nomadic cuisine — a contemporary interpretation of nomadic cuisine. Most of the dishes are based on the three most important ingredients in nomadic culture — water, flour and meat, cooked over an open fire, in cauldrons, on a chargrill, in a tandoor. The chefs of both Tunguska and AUYL pay tribute to the traditions of indigenous peoples. They use technology of cooking that existed thousands of years ago and include updated versions of the region’s iconic dishes in the menu. Locality and seasonality are two more gastronomic principles that are related to the concepts of the two restaurants.
On 13 September, Siberia will visit the neo-nomads at an altitude of 1,691 meters above sea level. Nikolay Bobrov and his team will prepare a 7-courses set dinner with wine and cocktail accompaniments. An ethnic projection will appear on the walls of the restaurant, immersing guests in the atmosphere of the North.
The dinner menu includes:
· Yenisei nelma with mushroom black caviar in horseradish sauce with grayling caviar
· Crispy “stone” with roe deer, foxberries, black garlic, and marigold flowers
· Farm-produced quail bird pie and foie gras with yak meat and sauce based on horseradish and ryazhenka
· Millet katanka in the Old Believers’ style with beef cheeks and morels in aged cheese sauce
· Yenisei lenok with baked cabbage in champagne sauce with grayling caviar
· Taimyr deer with glazed beetroot, rampson and black garlic aioli with port wine, bone marrow, and sterlet caviar
· Black Anna Pavlova with honeysuckle sorbet and pickled sweet cherries
