The creative tandem of chef Alexander Proshenkov and chef Ruslan Abdurmanov has introduced its first set menu at “Siro” restaurant (Almaty). “The Heritage of the Incas” menu will be available on Thursdays.
“The Heritage of the Incas” is the first chef’s table of this type in Almaty. The set menu is an original synthesis of South American and Asian gastronomic traditions, forming the Nikkei philosophy to combine Peruvian and Japanese culinary themes. The set menu consists of eight courses with an excellent cocktail and wine accompaniment. A stand-out dish is hamachi with coriander cream and green oil, Tiger Milk, Aji Punca and Aji Amarillo sauces. It is served with a glass of Finca La Linda dry white wine (Argentina). Among the undoubted success is Papa Rellena — a potato doughnut with an egg. The doughnut is filled with braised goat meat and mousse of baked onion and Parmesan. The dish is served with Pacha Mama cocktail.
